Have you started to give Meatless Monday a shot? If you haven’t, I highly recommend adding it to your weekly menu! All you have to do is try and not eat meat for one day.
Breakfast, lunch, dinner, and snacks: no meat involved. It might sound intimidating but truly, it’s not! It will help you get out of any recipe ruts you might find yourself in and after a few weeks of it, you might even start to notice a few healthier swaps you start making!
This Lemon Butter Broccoli Penne is the perfect meal to start your meatless meal adventure with! It is so easy, SUPER tasty and just the type of comfort food I look forward to. While broccoli does add some protein to this pasta, if you are worried there is not enough you can always use these chickpea-based pasta noodles to add even more protein.
From start to finish, this pasta takes less than 30 minutes to make and even makes a wonderful meal prep lunch for your week! It tastes wonderful warm or cold and stays fresh in the fridge all week.
How to make Broccoli Pasta with Lemon
This dish is so simple, it will be on your table in under 30 minutes! You start by cooking your pasta by their box directions. While your pasta is cooking prep your broccoli florets and place them in a colander. Once the pasta is cooked slowly drain the water and pasta over the broccoli, this will help to quickly cook the broccoli.
Next, you can set your broccoli and pasta aside while you melt butter in a deep skillet. Add your lemon juice, penne, and broccoli to the pan once your butter has melted. Stir everything together in the skillet until all your food is coated, season with salt and pepper to your liking and then let your dish sit for a few more minutes to warm through.
Voila! Dinner is served! I like to garnish with some parmesan cheese and maybe a bit more lemon juice. Meatless Monday might become your favorite day of the week with dinner this easy!

Ingredients for Broccoli Pasta
- Penne- gluten free is what I used, but use whatever type you prefer
- Butter
- Lemon- juiced
- Broccoli florets
- Parmesan cheese
- Salt and pepper to taste
How to Store and Reheat Broccoli Penne
This pasta is a breeze to store and reheat! Simply place in a container with an airtight lid and keep in the fridge. This pasta will stay fresh for up to four days. When you are ready to reheat, just place in the microwave and warm in 30 second increments until it is warm enough for you!

Broccoli Pasta with Lemon

Broccoli Pasta with Lemon is a quick and easy vegetarian meal that is ready in under 30 minutes!
Ingredients
- 3 cups uncooked penne, I used Barilla gluten-free
- 4 tablespoons salted butter
- ½ lemon, juiced
- 2 cups small broccoli florets
- 1/3 cup shredded parmesan cheese
- salt + pepper to taste
Instructions
Cook penne according to package instructions al dente.
Place the broccoli florets in a colander and slowly drain the pasta over the broccoli. This will help to quickly cook the broccoli, set pasta and broccoli aside.
Melt the butter in a large, deep skillet over medium heat. Add lemon juice, penne, and broccoli. Season with salt and pepper to taste.
Let mixture warm through, stirring occasionally for 5 minutes. Garnish with parmesan cheese and additional lemon juice if desired.
